Tasting Notes for Buzzard’s Roost 11-Year Old Double-Oaked Bourbon

Wayne and I have enjoyed Buzzard’s Roost Whiskey for a few years and have visited their Whiskey Row location in Louisville on several occasions. August 14th, Jason Brauner, co-founder of Buzzard’s Roost, was the guest speaker for the Owensboro Bourbon Society’s monthly meeting. During his talk he shared that they were about to celebrate their 5th anniversary and would be releasing a 7-Year Old and 11-Year Old Double-Oaked Bourbons on August 17th at Whiskey Row. That date was outstanding for us as we would be in Louisville for the Bourbon Women’s SIP Conference during the release. We had free time in the afternoon and ensured that we notched out some time to visit Buzzard’s Roost. As always, we enjoyed time in their lovely bar, had a neat pour of each new release, and decided on the spot that each would be coming home with us!

Tasting Notes: Buzzard’s Roost 11-Year Old Double-Oaked Bourbon

Mashbill – 75% corn, 21% rye and 4% malted barley.
Age – 11 Years
Proof – 113.8
Price Paid – $150 (plus tax)

Color – Rich mahogany. 

Aroma – Cherry, toffee, brown sugar, caramel, vanilla, and a hint of smokiness.

Tasted Neat – Brown sugar and cinnamon toast, toffee, sweet oak, dried cherries, dark chocolate, and more cinnamon.

Finish – A terrific medium to long finish with white pepper, sweet oak, a hint of very dark chocolate, and then black pepper.

Tasted with dried cranberry – Many of the delightful flavors became muted and replace with orange zest and a strong spiciness.

Tasted with a pecan – Dark chocolate, deep caramel, and oak. It is very nice and reminiscent of a dark chocolate covered caramel with a hint of spice.

Tasted with dark chocolate – Like the cranberry, this muted many of the terrific flavors. There is a forward spiciness and strong notes of orange zest with cinnamon on the finish. Somewhat better than with the cranberry.

Final Notes and Video

We truly enjoy this offering by Buzzard’s Roost. The 11-year-old, double-oaked bourbon is almost decadent. The rich mahogany color is striking, complemented by impressive legs. The aroma confidently boasts notes of cherry, toffee, brown sugar, caramel, vanilla, and a subtle hint of smokiness. On the palate, it delivers an indulgent mix of brown sugar and cinnamon toast, toffee, sweet oak, dried cherries, dark chocolate, and an assertive touch of cinnamon. Its finish is a bold medium to long experience, featuring white pepper, sweet oak, a whisper of very dark chocolate, and a punch of black pepper. Overall, this is a deep, dark, and complex spirit that compels you to reach for another sip.

Wayne and I highly recommend this bottle for your collection.

Buzzard’s Roost Releases Two Double-Oaked Single Barrel Bourbons to Mark 5th Anniversary
7-Year Old and 11-Year Old Double-Oaked Bourbons Will Be Released Aug. 17 at Whiskey Row

Aug. 13, 2024 – Louisville, Kentucky – In Summer 2019, when Buzzard’s Roost began with three barrels of rye, Cofounders Judy Hollis Jones and Jason Brauner already had long-range vision (like buzzards do!), leading them to purchase several barrels of aged bourbon to put down for a special day. That day is now here!

Buzzard’s Roost will release Founders Seven-Year-Old Straight Bourbon ($125) and 11-Year Old Straight Bourbon ($150) at its Whiskey Row Experience at 11 a.m. on Saturday, Aug. 17. A limited number of bottles will be available as pre-sale online.

Both bourbons are double-oaked, undergoing secondary maturation in Buzzard’s Roost’s signature, new Char #1 oak barrels that were precision-toasted to coax out very specific flavors from the wood. From Day One, Buzzard’s Roost’s point of difference has been its proprietary secondary maturation – or double-barreling – process that leads to rare flavor profiles not found in any other whiskeys. 

“These are some of the most exciting bourbons we’ve produced,” says Buzzard’s Roost Master Blender Jason Brauner. “We bought barrels of aged bourbon and then spent considerable time determining the exact toast profile for the second barrels, to result in the best flavors. They started as excellent bourbons, and both aged beautifully, evolving into even better bourbons.”

As for the long-range vision, CEO Judy Hollis Jones notes that the brand is now in 23 markets (including Canada) and has earned the respect of the most discerning palates. Wine Enthusiast gave Buzzard’s Roost’s new Bottled in Bond Bourbon 95 points, while Toasted French Oak Bourbon received 94 points. Buzzard’s Roost Char #1 Rye was named Best American Rye in the International Whisky Competition, while Toasted American Oak Bourbon was named Best Bourbon in the 2024 Barleycorn Awards. 

“The accolades mean a lot to a young craft brand like Buzzard’s Roost,” says Hollis Jones. “But what means the most is sharing these whiskeys with friends and customers and watching our brand grow, reaching new whiskey lovers who keep the momentum going.” 

Both Bourbons share the same mash bill: 75% corn, 21% rye and 4% malted barley. The 7 Year Old Bourbon is 109.2 proof, and the 11 Year Old Bourbon is 113.8 proof. Guests can try before they buy at the Buzzard’s Roost Whiskey Row Experience, with pours available for purchase at the bar, and both will be included in tasting flights while supplies last.

July 2024 Tasting of Starlight Bourbon Finished in Champagne Wine Barrels

Wayne and I recently visited the Starlight Distillery in Borden, IN for the first time and thoroughly enjoyed it. Please see our visit story HERE. Thus, for this tasting, we decided to taste a recent Single Barrel release that we purchased during our visit: Starlight Bourbon Whiskey Finished in Champagne Wine Barrels. We were intrigued by this one at the distillery and requested a small sample taste. That was enough for us to make the purchase. Starlight Bourbon Whiskey Finished in Champagne Wine Barrels, Single Barrel

Mashbill – Carl T. Single Barrel Bourbons begins with their 3-grain and 4-grain mash bills. Undisclosed blend of:
1) 60% Corn, 20% Rye, 20% Malted Barley
2) 51% Corn, 20% Rye, 20% Malted Barley, 9% Wheat

Age – 4 years
Proof – 117.8
Price Paid – $80.24 (with tax)
Finished – Finished in Champagne Wine Barrels
Other – Sweet Mash Fermentation, Distilled in Copper Pot Stills; uncut, and straight from the barrel without any filtration.

Appearance – Golden amber. They are somewhat slow to form but this spirit has terrific legs on the glass.

Aroma – Very inviting nose with the light brightness of summer fruits and maybe a hint of citrus. There is also the sweetness of vanilla cream. In addition, there is a warm baking spice aroma coming through.

Tasted Neat – The bourbon comes forward clearly with notes of vanilla cream, light caramel, hints of grape, and nice baking spices. The finish is fascinating with somewhat of an effervescence that is almost popping with the flavor of grapes. It is like the perfect marriage of bourbon and champagne in a most unique way.

Tasted with dried cranberry –  The cranberry makes it pop more and brings the grape forward. The front and middle of the palate is champagne-like while the finish has a warm bourbon hug with spices.

Tasted with a pecan – The pecan comes through like a candied pecan and the grape-like fruitiness is gone as is the effervescence. It is also much woodier an with a nice spice note. Different but still good.

Tasted with dark chocolate – Interestingly, the chocolate brought a lot of spice, such as white pepper, baking spices, and cinnamon. The effervescence returned as well and each pop seems a bit like a spice explosion.

Discussion and Final Notes

This is a story of bourbon meeting champagne and becoming great friends. In our minds, this shouldn’t be the case; however, in our mouths, this unique finishing creates a one-of-a-kind taste sensation. The feeling of effervescence and the taste of a traditional bourbon with hints of a light champagne taste is so interesting.

We love that the bourbon holds its own and in a really strong way. However, this does not detour the champagne from letting you know it has arrived at the party as well! This is a bottle that we will want to share with friends to see what they think and watch their reactions. It is truly different, in a great way, and a terrific addition to a bourbon collection.

Sweet Mash: Sweet mash is a process in distillation that does not use the sour mash as a starter for fermentation. Instead, only fresh yeast is used. Using sweet mash has the benefit of more control over specific ingredients and the ability to use lower temperatures for fermentation. However, it does require more maintenance and extreme cleanliness to avoid contamination. For more information, please read this post – Four Stages of Making Spirits.

Bourbon Whiskey

American – Bourbon is considered America’s only native spirit, and it originated in the late 1700s. During the Civil war, bourbon was used as currency due to ease of transport. By the end of the Civil War, there were over 4,000 bourbon distilleries in the USA.

What’s in a name? – There are several theories on how Bourbon got its name; however, the most common thoughts are that it is derived from the French Bourbon dynasty, from Bourbon County in Kentucky, or perhaps Bourbon Street in New Orleans.

All bourbon is whiskey but not all whiskey is bourbon.”

Whiskey (generic) must be made from cereal grains, distilled below 190 proof, placed into an oak container, and bottled at a minimum of 80 proof.

To be Bourbon, additional requirements must be satisfied, and this is in accordance with Title 27 of the US Code of Federal Regulations (CFR). This was further acknowledged by the US Congress May 4, 1964, when it declared Bourbon a “distinctive product of the United States.”

Bourbon Requirements include that it must be made in the USA with a mashbill that contains at least 51% corn. It must be distilled at a maximum of 160 proof (80% ABV).  It then must be placed into a new, charred oak container at a maximum of 125 proof (62.5% ABV). In addition, it must be free from added substances (except water) and bottled at a minimum of 80 proof (40% ABV).

Straight bourbon whiskey is a subcategory of bourbon whiskey that has been aged for at least two years in new, charred oak barrels and doesn’t contain any additives. If aged less than four years, the label must include an age statement.

To add “Kentucky” to the label, it must be aged for at least one year in the state of Kentucky.

Common Taste Profiles for Bourbon

Taste influences: Bourbon can have a wide range of aromas and tastes. It is thought that 70-75% of the flavor is derived from the barrel and taste is also influenced by how long it remains in the barrel and the temperature of where the barrel was stored. Another source of the flavor is the mashbill and the specific grains because the use of rye versus wheat will derive a different profile. The yeast strain used in fermentation also influences the taste profile.

Common tastes identified: The most common flavor note from bourbon is a sweetness, often vanilla and caramel. Notes of wood are prevalent as well and that might include oak, almonds, and pecans. Sometimes there are spicy flavors such as pepper, nutmeg, and cinnamon. Other times fruit and floral flavors emerge such as apple, pear, cherry, figs, raisins, dates, and rose. Naturally, the grains used will be part of the flavors identified and that might be corn, rye, wheat, barely, etc.

As you can see, the flavor combinations are endless and can be quite complex. It is also important to note that you can have five people in a room, tasting the same bourbon, and they might each identify different things and that is OK! Our nose, personal palates, and even learned experiences and memories all influence what we taste. This is what makes bourbon such an interesting drink and how it can generate a lot of conversation between friends.
